1 poblano pepper, cored and halved lengthwise
2 jalapeño peppers, cored
50g fresh coriander
2 garlic cloves, halved
1 tbsp peeled, thinly sliced fresh ginger
2 tbsp white vinegar
1 tbsp olive oil
1/4 tsp salt
Grill the poblanos and jalapeños until charred, and then turning the jalapeños halfway through.
Let them cool for about 4 minutes. And then peel and combine them with the other ingredients in a clean blender.
Purée them until smooth, and pour the sauce to a medium jar.
Please keep this mixture in the fridge for 2 weeks.
Makes about half a pint for your perfect healthy meals.
