Spinach Salad with Smoked Mackerel and Sweet Potato

How to make it.

  • Let’s cut some sweet potato into 1 or 2 cms cubes. Or you can peel it if you don’t like its skin, but you don’t have to. Its skin contains some minerals and vitamins…..

  • Toss with a little olive oil, cayenne pepper, paprika, ground allspice, salt and pepper.

  • Roast in an oven at 180°C for 20 minutes or until you can squish a piece between your fingers.

And then make your own quick dressing with runny honey,  a little olive oil, wholegrain mustard, and brown vinegar.

It’s time to toss the sweet potato with the spinach and let flake it in some smoked mackerel or grilled salmon, if you like. Pour it over the dressing and serve with some finely sliced red chilli if you like for the tasty dish.
