Try this soup for summer guys! You can make it ahead for several day, but do not put the yogurt in until a few hours before serving. That a tip!

  • Vegetable broth

  • Olive oil

  • Salt

  • Pepper

Ingredients

  • 2 tbsp of olive oil

  • 1 medium size of onion, chopped

  • 1  piece fresh ginger (about 2-inch), peeled and grated

  • 1 clove of  garlic, sliced

  • 2 pounds of carrots, sliced

  • 6 cups of low-sodium vegetable broth

  • 1 lime juice

  • 1 cup of plain yogurt

  • Salt and ground black pepper

Preparation:

  1. Heat oil in a suitable pot over medium heat. And then add onion and sauté until softened about 6 to 8 minutes.

  2. After that put ginger and garlic and then sauté them until fragrant about 1 or 2 minute.

  3. Increase heat to medium-high and stir in carrots. Pour broth into pot and cover then bring to a simmer.

  4. Now remove a cover and then reduce heat to medium in order to maintain a simmer and cook well until carrots are very tender just about 25 to 30 minutes.

  5. Remove a perfect soup from heat and let it cool down slightly.

  6. RIght now it’s time to working in batches. Purée soup in a blender until smooth.

  7. Transfer all to a large bowl and then cover and refrigerate it until chilled, about 2 hours.

  8. Before serving, don’t forget to stir soup in lime juice and yogurt.

  9. Season with salt and pepper.

  10. It’s ready to serve.
